Chef Toby Leigh believes strongly in the importance of local sources of food. Ramsgate benefits from the presence of the Goodwin Sands, which protect the inshore waters from the depradations of trawlers. Our shallow waters are teaming with wild fish, including Dover sole, turbot, sea bass, brill and a host of cheaper delicious species.
The local salt marshes produce magnificent lamb. The famed orchards of Kent provide fresh fruit as well as our extensive range of juices grown at a farm near Harrietsham in the Chegworth Valley; our bottled water comes from Kingsdown near Dover which provides water which has been filtered through the chalk of the North Downs. The result is pure clean tasting spring water at its very best.
