Mags is the restaurant’s main forager. She was born in Ramsgate and takes great pleasure in finding samphire at Pegwell bay, sea beet and wild rocket along the nearby coast. Further inland she discovers rowan berries, rose hips, fennel, elderflowers, crab apple, sloes and elder berries. Both the kitchen and bar make good use of Mags’ finds.
